Hi Nick. I'm older than you so need to jump in and go on record for saying those soup-can casserole recipes actually became very popular in the 50's and 60's. And they're so darn delicious I can't imagine ditching some of my favorites. They most certainly have their place. But I do make a fairly "pure" potato casserole that relies on heavy cream and the starch from the potatoes to thicken. With that said, yay for any casserole recipe, pure comfort food.
