Casseroles should be a part of your meal planning. They can almost always be made in advance and reheat well. Ditch the soup can recipes of the 90s though and try these crave-worthy casseroles!
Casseroles kind of get a bad rep due to literal decades of soupy casserole mixes.
And don’t get me wrong. I love a good, classic casserole and I’ll be happy to serve it up. It’s nostalgia for me.
And so it goes with casseroles. While the classics are there, we can make them better.
Here are FIVE casseroles that I’ve been crushing on lately and since it is casserole season, I figured I’d share them with you!
Using frozen tater tots is a casserole short-cut I AM HERE FOR. The trick to making this casserole special to make a batch of crispy bacon and use the grease for other cooking. It’s a winner and always a hit on a lazy weekend brunch. It does take some time to bake, but you can do the whole thing in advance.
Let’s stick in the breakfast world for a bit and ponder this bagel breakfast casserole. This is one of those great casseroles that I feel like it actually better on day two or three, reheated. Do with that information what you will.
This squash baked ziti is truly a casserole that I make at least once a year. I can’t believe I missed the fall window almost for this guy, but it’s still a good choice throughout all of winter. Cheesy, slightly sweet and savory, and a nice change-up from the classic ziti bake.
You know I gotta take a trip through Italy for some casserole action. This casserole has all the flavors of a classic Eggplant Parm, but is slightly easier actually and is great served over pasta or just with some crusty bread.
See what I did there? Pizza meet spanokopita! It’s a match made in a sheet pan lined with parchment paper, but one that turns out actually better than a store-bought pizza ever could. If you like crispy crust on your pizza, this is a must-try!
