Fall starts today and even though it’s still pretty hot in a lot of areas, my brain and kitchen are very ready for fall. Specifically, soups.
I was browsing through the Crunch Time archives looking for some soups that I haven’t made in a while and thought I’d compile some of my faves for you all.
Take a look. Make a soup!
Easy Pot Roast Soup
This is a hearty soup to kick off soup season. It has a really deep flavor thanks to all the veggies you would normally see in a pot roast recipe but in a rich broth. Love this one on a chilly fall weekend.
Creamy Mushroom Barley Soup
Barley is the key to this vegetarian soup. It gives the soup a great texture and is really filling without any meat. If you aren’t a mushroom fan, maybe skip this one as it is heavy on the mushroom flavor, similar to a cream of mushroom soup.
Kidney Bean Soup
Tex-Mex lovers unite! This soup is almost like a bean dip turned soup. Slow-simmered beans blended with lots of spices and served with a chunky avocado salsa and crispy corn strips. So good!
Lemony Lentil Soup
I usually make this in a pressure cooker, but you don’t have to use one. It’ll work also in a normal pot, but just take a little longer to break down teh lentils. This is a simple soup with not a lot of ingredients, but has a bright, lemon flavor that is really good with crusty bread.
Chicken Meatball Orzo Soup
Homemade chicken meatballs are the star of this soup which also has a light broth and tender orzo. Almost like a chicken noodle soup, but updated a bit and meatier.
Brown Butter Sweet Potato Soup
And now for something completely different. This soup is a sweet potato base but the main flavors come from a nutty brown butter and coconut. It’s creamy smooth and you need a crunchy topping for it. A favorite at my house each fall.
Pressure Cooker Cheeseburger Soup
All the flavors of a good cheeseburger but in soup form? Yes please! This is a meaty soup in a rich broth but to be honest, the real joy of this soup is the toppings. Diced pickles, cheese, fresh tomatoes, and crunchy croutons!
Easy Pork Ramen
Lots of short-cuts in this quick ramen recipe to make it somewhat doable on a weeknight and definitely doable on a lazy Sunday. Don’t forget the jammy eggs!
Chorizo Yam Soup
This soup is a twist on a popular taco recipe I like to make with chorizo and sweet potatoes. It’s one of my favorite soups to make because the flavors are very unique and not something you can buy at the store.
