Our local neighborhood pool opened this weekend and we are really trying to max out the few months that it’s open this summer. In fact, my Father’s Day this weekend was spent at the pool for a few hours, maxing and relaxing with snacks!
If you are lucky enough to have access to an outdoor pool on this sure-to-be hot summer, you’ll need some good snacks to bring for the pool beside the must-have chips.
So, let’s dive in and make some great pool recipes this summer!
Pool-Ready Sandwiches
I love a good sandwich on a pool day. Here are some of my favorites that travel reasonably well.
Ultimate Picnic Pool Sandwiches
A very classic French-style baguette sandwich… I dream of this pool sandwich. A good baguette with a smear of soft herbed butter, fig jam, cured meats and cheeses, and arugula. It might just be sandwich perfection!
My Favorite Chicken Salad
You have some options with this chicken salad. It’s very good in sandwich form between two toasted pieces of bread, but you can also dice things a little finer and use it as a dip.
Skirt Steak Sandwich
I like making this sandwich out of a big loaf of bread and then slicing it up for individual servings. You can actually use almost any steak for it but don’t skimp on the lemon sauce. It brings the sandwich together.
Interesting Snackies
Of course you’ll need some snacks at the pool and while you can always get away with a bag of chips (I recently discovered Utz Hot Honey Chips!), it can be fun to pack something unique. Here are a few fun ones.
Mojito Fruit Kabobs
Instead of the big bucket of fruit, instead make these fun minty fruit kabobs. You can make them adult-only with a little rum or keep them kid-friendly. Just make sure you can tell the difference!
Whipped Cottage Cheese Pinwheels
Whipped cottage cheese is all the rage these days and I do love it instead of traditional creamy spreads. It’s a great layer on these fruit-packed pinwheels and these would be a fun and healthy poolside snack.
Dips for Days
If you find me at the pool without a dip, something has gone horribly wrong.
Spicy Ranch Dip
While I originally made this dip with wings in mind, it’s actually great with veggies or sturdy chips. Make sure to keep it chilled and it’ll be a nice snack when you’re out of the water.
10-Layer Greek Dip
Okay… maybe this dip is a tad bit ambitious for some, but if you are planning a larger pool party, it would be great to bust it out with some chips.
Peanut Butter Yogurt Dip
I made this dip with a good kid snack in mind, but I found myself sneaking little bowls of it ALL THE TIME. It’s great with pretzels, but also wonderful with fruit!
Copycat Bitchin’ Sauce
For some reason, the price of this popular dip has skyrocketed recently (probably because it’s popular). A homemade version is most necessary and this version is 97% there. Give it a shot!
